Panama Baru Indian High Estate coffees are grown in the Bouquete
growing region of western Panama. Indian High Estate is one of several coffee
farms located around the slopes of Volcan Baru near the Costa Rica border that
produces exceptional, distinctive coffees. This coffee is naturally shade grown
at 1400 Meters (4,600 feet) and processed using the traditional method of density
sorting in flotation canals between washing and drying. These Baru Estate coffees
are then partially sun-dried and finished in a mechanical dryer.
Generally,
Panamas are sweet but mild and usually fit somewhere between Mexican and Colombian
coffees in the flavor profile. Until recently Panama coffees were typically
used for blending or filling, but over the last few years this coffee has improved
considerably and now Panamas have distinguished themselves
to be an excellent value. This exemplary Volcan Baru is a very gifted varietal
all on its own and makes for a classic, high-toned, rich yet smooth brew, or
should we say "Baru".
A
classic quintessential Central American coffee. Intense but balanced acidity,
medium body, and tartly sweet fruit notes -- berry and citrus -- that soften
towards a round, sweet, chocolaty finish.
