The coffee producing regions of Vera Cruz and Chiapas account
for 60 to 70 percent of the Mexican coffee crop and the remainder is grown in
Puebla and other states including Oaxaca. The coffee grown in Chiapas and Oaxaca
is called Altura (which means "high grown") and is grown on the slopes
at nearly 4,000 feet above sea-level. Here prevailing westerly winds from the
nearby Pacific form moisture-laden clouds that sustain a high altitude, rain
forest environment so favored by the world's best coffees.
Coffee is a shade-tolerant shrub which traditionally grows beneath
a canopy of native forest trees. While shaded plants produce fewer beans, they
are richer in nutrients and sugars. The result is a coffee of excellent quality
with highly concentrated flavors. Not only is shade advantageous to the coffee,
the protective canopy also provides habitat for numerous birds, animals and
beneficial insects. Shade-grown coffee production has been shown to be highly
beneficial to bio-diversity conservation efforts in tropical rain forest ecosystems.

The aroma is rich, deeply dimensioned, shot through with bracing
grapefruit tones; the body smooth and full. The richly expressed grapefruit
tones excite when the cup is hot, but turn a touch nutty and sharp as it cools,
particularly in the finish. This one is an excellent breakfast cup: rich and
smooth but crisp with citrus notes. Nice! A must have in your Bean Cellar!
