In Sulawesi, this coffee was referred to as Celebes Kalossi by Dutch colonists. It is shade grown in the central highlands, above 1100 meters on small farms in the region of Toraja, which was also re-named Kalossi by the colonists. Toraja is in the north of Sulawesi, where some of the best coffees can be found. These farms are generally sustainable as well as agriculturally diverse. In Japan these coffees are regarded very highly and has become the worlds largest consumer of coffee from Sulawesi, paying high prices for the best coffees available.

Processing is done differently in different parts of Indonesia. This coffee is de-pulped, fermented lightly and rinsed. The beans are then patio dried in the parchement. What was traditionally a natural coffee has gradually changed to a semi-washed coffee that is often considered washed. The deep sea-green color comes from stripping the hull off the coffee a few days after drying.

Big-bodied but smooth, this Sulawesi displays a rich, clean cup with a fine balance of acidity, sweetness and - The Sulawesi Factor - carnally rich fruit notes reminiscent of cantaloupe. An excellent balance of sweetness and bitterness in the underlying structure. Fine range from middle to bottom of the profile, a hint of flowers, and deep, dry plum-wine fruitiness.... even a slight tobacco undertone, a perfect Indnonesian coffee!

If you like Port wines and good Brandies, you will cherish this Sulawesi! It's become our favorite!

Roast: Full City to Italian. This one needs to rest a full 24 hours and lighter roasts should rest 48 hours or more. Talk about delayed gratification! Trust us.... it's worth the wait!!! Roasts will have a natural uneven color throughout especially the lighter roasts.
