This is an organic Colombian Mesa de los Santos aka. Bucaramanga,
a private "estate" mill coffee from a single family farm. The coffee
is what great Colombian was 20 years ago: a Caturra Cultivar variety is used
rathar than the inferior, high-yield, disease resistent Variedad Colombian.
Certified organically grown in full shade from trees at very respectable elevations
of 5,000 to 5,200 feet.
Mesa de los Santos has been very agressive in improving their
ability to grow, mill and export the best quality, Caturra varietal Colombian
coffee. In fact they recently won a competitive World Resources Institute venture
capital award honoring their bio-diverse business, an effort coordinated by
manager Oswaldo Acevedo.
This organic resembles the floral & fruity Colombians, but
with a lighter, almost bouncy body and acidity. Richly nutty aroma, a very bright,
clean cup with sweet floral and fruity notes and sweet chocolate undertones.
You can drink this all day and know you're also being a friend to the ecology
of Colombia.
In
summary, most would agree that this is a bean that has it all. It's smooth,
yet utterly complex, dark, robust and rich, yet comes across as bright and enjoyable.
Colombia is justly renowned for it's good coffee flavor and "Buc"
is a nice example. Truly one of the finest that Colombia has to offer.
Roast: City through Full
City. This coffee takes a wide lattitude of roasts and it cups very well through
the roast spectrum. Mesa de los Santos requires slightly more roast time than
comparable coffees so set your roast times a bit higher and keep an eye on them
to stop them at your desired roast level.
